Raspberry Icebox Cake
Start by whipping the heavy cream, powdered sugar, and vanilla extract in a mixing bowl until you get soft peaks. Then, in a dish, layer graham crackers first, followed by a layer of whipped cream, and then add a layer of raspberries. Keep repeating these layers until all of the ingredients are used, making sure to finish with a layer of whipped cream on top. Cover your dish and refrigerate it for at least 4 hours or, even better, overnight so it sets nicely. If you’d like, you can garnish with mint leaves right before serving. Enjoy this refreshing dessert!
