Pumpkin Basque Cheesecake

  • 600g (21 oz) Cream cheese, Full-fat, room temperature
  • 180g (¾ cup + 2 tbsp) Granulated sugar
  • 3 large Eggs, Room temperature
  • 200g (¾ cup + 2 tbsp) Pumpkin purée Unsweetened (not pumpkin pie filling)
  • 250ml (1 cup) Heavy cream
  • All-purpose flour, 1 tbsp, just enough to help it set
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon
  • ½ tsp Ground ginger
  • ¼ tsp Ground nutmeg
  • ⅛ tsp Ground cloves
  • ¼ tsp Salt
