Pappardelle with Bolognese

Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables are soft.
Add the garlic and cook for an additional 1 minute, until fragrant.
Add the ground meat and cook until browned, breaking it up with a wooden spoon.
Once the meat is browned, pour in the red wine (if using) and let it simmer for a couple of minutes to reduce.
