Prepare the Cabbage: Trim the outer leaves from the cabbage and slice it into 1-inch thick “steaks,” making sure to keep the core intact to hold the slices together.
Season the Cabbage: In a small bowl, combine the olive oil, minced garlic, onion powder, and dried thyme. Brush both sides of each cabbage steak with the seasoned olive oil mixture.

Bake the Cabbage: Place the seasoned cabbage steaks on the prepared baking sheet. Season with salt and pepper to taste. Bake in the preheated oven for 20-25 minutes, or until the cabbage is tender and slightly caramelized around the edges.
Add Cheese: Remove the cabbage steaks from the oven and sprinkle them with Parmesan and mozzarella cheese. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Serve: Once the cheese is melted and golden brown, remove the cabbage steaks from the oven. Serve hot and enjoy!
