Jambalaya
1. In a large pot, heat olive oil over medium heat.
2. Add the diced chicken and sausage, cooking until they are browned.
3. Toss in the onion, bell pepper, celery, and garlic; sauté until these vegetables are soft.
4. Mix in the rice, Cajun seasoning, salt, and pepper.
5. Pour in the chicken broth and diced tomatoes.
