2 tablespoons of lemon juice

2 sprigs of fresh cilantro (coriander)

Preparation: Combine the avocado, egg, and lemon juice in a food processor or blender. Blend till creamy and smooth. Blending continuously, slowly add the sunflower oil. This will contribute to the mixture’s emulsification and give it a creamy mayonnaise texture. After the mixture is smooth, stir in the fresh cilantro, a dash of salt, and a little black pepper for flavor. Blend one more until everything is thoroughly mixed.
