Ingredients

For the Onion Rings:

3–4 large yellow onions

1 quart buttermilk

2½ cups all-purpose flour, divided

⅔ cup cornstarch

1½ teaspoons baking powder

1 teaspoon paprika

1 teaspoon cayenne pepper

½ teaspoon garlic powder (with or without parsley)

Dash plus ¼ teaspoon salt, divided

Pepper, to taste

24 oz beer (use as needed for batter consistency)

1 tablespoon olive oil

8 oz Panko bread crumbs

1 teaspoon garlic powder

Peanut or vegetable oil (for frying)

For the Dipping Sauce:

1 cup mayonnaise

1½ tablespoons ketchup

1½ tablespoons prepared horseradish

½ teaspoon paprika

½ teaspoon cayenne pepper

¼ teaspoon dried oregano

¼ teaspoon salt

Dash of pepper

Instructions

Soak the Onions

Onions sliced into rings and soaking in buttermilk.

Slice onions into ½-inch rings and separate them.

Place in a bowl and cover with buttermilk. Cover and refrigerate for 1 hour.
