Instructions & Methods:
Step 1: Prep the Veggies
- Wash, peel (optional), and dice the potatoes into 1/2-inch cubes.
- Peel and thinly slice the onions.
Step 2: Par-Cook the Potatoes (Optional but Recommended)
- Bring a pot of salted water to boil.
- Boil potato cubes for 5 minutes to soften slightly.
- Drain and pat dry—this helps them crisp up beautifully when frying.
Step 3: Fry the Potatoes
- Heat 2 tbsp of oil or butter in a large skillet over medium heat.
- Add potatoes in a single layer. Avoid overcrowding to get crispy edges.
- Fry for 10–15 minutes, turning occasionally until golden brown and crisp.
- Sprinkle with half the salt, pepper, paprika, and garlic powder.
Step 4: Caramelize the Onions
- In a separate pan, heat 2 tbsp of oil or butter over medium-low heat.
- Add sliced onions, a pinch of salt, and cook slowly, stirring occasionally for 15–20 minutes until golden and sweet.
- Optional: Deglaze the pan with a splash of water or a teaspoon of balsamic vinegar for extra depth.
Step 5: Combine & Serve
- Gently fold the caramelized onions into the crispy potatoes.
- Adjust seasoning to taste.
- Garnish with fresh parsley or chives.
