Ingredients:

For the Filling:

2 cups shredded smoked brisket (pre-cooked)

1 cup beer cheese (store-bought or homemade, see below)

Beer Cheese Sauce (optional homemade):

1 tbsp butter

1 tbsp flour

¾ cup beer (lager or ale)

1 cup shredded sharp cheddar

2 tbsp cream cheese

Salt and pepper to taste

For Boiling:

10 cups water

½ cup baking soda

For Topping:

1 egg (beaten, for egg wash)

Coarse salt or crushed pretzels
