Ingredients
2 lbs beef stew meat, cut into cubes
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic, minced
3 cups beef broth
2 large potatoes, peeled and diced
1 can (15 oz) kidney beans, drained and rinsed
1 can (14 oz) diced tomatoes
1 green bell pepper, chopped
1 jalapeño, seeded and minced (optional for heat)
2 tsp chili powder
1 tsp cumin
Salt and pepper, to taste
Instructions
Brown the Beef:
Heat oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
Sauté the Veggies:
In the same pot, add onion, garlic, green bell pepper, and jalapeño (if using). Cook until softened.
Combine Ingredients:
Return the beef to the pot. Add beef broth, diced tomatoes, potatoes, kidney beans, chili powder, cumin, salt, and pepper.
